Joe has never been much of a cook. His specialties include eggs, grilled cheese and frozen pizza.
So you can imagine my surprise when his mom told me that before I knew Joe, he had called her asking for a recipe.
He was having some friends over and wanted to make them one of his childhood favorites….Bacon Pie.
It’s the perfect blend of bacon, swiss cheese & onion in a quiche-like dish that makes it’s own crust.
I’m excited to share the recipe with you with a few tweaks!
Ingredients
-
1 cup shredded Swiss cheese
-
1/3 cup onion, diced
-
2 cups milk
-
1 cup unbleached flour
-
1 tablespoon butter, melted
-
1 1/2 teaspoons baking powder
-
1/2 teaspoon salt
-
1/4 teaspoon pepper
This recipe makes one 10 inch pie.
*Alternatively, you can use bacon slices cooked until crispy and then crumbled.
Cooking Steps
-
In a skillet over medium heat, cook bacon pieces until crispy and all fat is rendered. This can be sped up by cutting pieces smaller. Make sure to save fat for cooking eggs!
-
Remove bacon pieces onto a plate covered with a paper towel
-
Grease a 10 inch glass baking pie plate and preheat oven to 400 degrees
-
Sprinkle bacon pieces, cheese and onion into pie plate.
-
In a large bowl, whisk together the rest of the ingredients.
-
Pour into pie plate and bake for 35-40 minutes or until a knife placed into the center comes out clean.
-
Cool for at least 5-10 minutes before serving, longer if possible.
-
Enjoy with those you love!
