Farm Family Monthly Recipe Highlights
enjoy your delicious meats this month
We always love to highlight a few cuts and recipes each time. And if you have some favorites of your own, please share with me, I love learning new recipes!
October Recipes
- Dry Brine Roast Chicken - a simple and delicious way to prepare a whole chicken
- Skillet Pork Chops - sometimes we just use salt, the flavor of the chops is so nice on its own
- 15-Minute Smoked Pork & Greens Soup or these Southern Green Beans are delicious with the smoked neckbones
- Ramen with the pork ramen broth - since our broth is concentrated, add water to make the 4 cups needed for recipe. Our ramen broth is also delicious mixed 1:1 with water and a sprinkle of salt as a yummy sipping broth
- Shenk Ribeyes - follow these simple tips (on the card in your tote pocket as well)
-
thaw for 2 days, remove from package and sprinkle generously with salt - let sit on a plate in the fridge for 12-24 hours
- remove from fridge 30 minutes before cooking and add any additional seasonings - montreal, pepper, etc.
-
sear on a hot cast iron skillet with a bit of lard, butter or tallow for 3-4 minutes per side or until internal temperature is 130 degrees for medium rare
-
remove from heat and rest for 8-10 minutes before slicing
-
September Recipes
- Roasted Chicken Drumsticks - simple and our kids love them!
- Uncured Ham Steaks - these are amazing with a simple sear in a hot cast iron skillet for 3-4 minutes per side until internal temperature is around 140 degrees; you can also bake these!
- Lard - this is a FREE gift for everyone this month! Store on the counter for 6 months or in the fridge for over a year. We sear meat, sautee or roast veggies, fry and so much more with lard! Learn more on our blog here.
- Beef Cubed Steak - this is a new cut so I wanted to give a few options - chicken fried steak, steak with gravy, or Cuban-style bistec empanizado, or simple cubed steak with onions ( I made this minus the onions and it took less than 10 minutes!)
- Beef Skirt Steak - great for fajitas or use this simple marinade
***Just a reminder to wipe down your insulated tote if needed and let it air out before storing for next month. If it’s helpful, store in your vehicle so you’ll remember to return at your next pick-up.
THANK YOU FOR SUPPORTING OUR FAMILY & OUR FARM, WE APPRECIATE YOU :)
